French Chocolate Truffles: Accidentally Delicious!

Following up on our previous workshop focused on tiramisù, the most iconic Italian dessert, Francesco and Maya will teach you how to prepare delicious chocolate truffles made with chocolate ganache (not to be confused with the Belgian pralines). To do so, we’re moving to 19th-century France, where the ganache, as we know it,was accidentally invented by a “ganache.” Are you confused? That’s normal—all your questions will be answered while we get our hands very dirty!
We are going to learn how to prepare a chocolate ganache and then roll our chocolate truffles with different coatings. There’ll be plenty of toppings to suit everybody’s fancy!
Participants will take home a selection of handmade truffles.
The workshop will be taught by Francesco Gariboldi, who worked as a professional baker in Italy, with assistance from Maya Parson of Roots & Fruits: Leuven Local Food Connection.
For the workshop, you will need to bring:
- A silicone or rubber spatula
- A medium sized mixing bowl (diameter ~15-20 cm, better if microwave safe)
- A sealable container than can contain 300 gr of liquid, better if in layer of 2-3 cm
- A small sealable container for 4 truffles
- A sturdy tablespoon
- An apron
Ingredients will be provided (registration fee covers the cost).
Please be aware: The chocolate ganache requires the use of heavy cream. This recipe is not suitable for vegans or anyone who avoids dairy.
